Airfried Zucchini
Hello peeps! I am not particularly sure when I am going to get back to regular weekly blogging but honestly, I feel there is a lot going on in my life and so I am trying to tell myself it’s ok to be MIA in this space :). Anywho, I have been getting my hands on home grown Zucchini quite a bit (thanks to our community’s strongest and super knowledgeable person). We have a small patch within the community where residents can grow veggies/ fruits/ plants in general as they like. We are growing some brinjals & tomatoes mainly in ours. This person grows so many veggies and she is so generous to share with all of us! No one else has Zucchini at home. So, all this home grown zucchini that she gives is just for me :D.
As with most of my life now with the AirFryer, I just chop the veggies, mix with seasoning and chuck it in the AirFryer. I just love how the taste of nicely air fried veggies/ baked veggies taste. I feel the sweetness of the veggies come out nicely in this process. And I love how once you chuck it into the airfryer, you pretty much can forget about the veggies that you put in :). Win-Win for sure! I have made these so many times now but never got around to taking a nice pic for the blog. It’s a very simple recipe and if you like zucchini/ aubergine, do give this a try.
And oh, the flower in the pic is from a plant my neighbour gifted me :). My heart was so happy when I was taking this pic. Harvesting your own veggies is a feeling that cannot be explained and to make a food pic setting with a home grown flower only adds to that feeling :).
- 1 large zucchini
- 1.5 tsp garlic powder
- 1.5 tsp dried italian seasoning
- 1/3 tsp salt
- 3/4 tsp red chilli flakes
- a pinch freshly ground pepper powder
- 1 tsp rice flour
- oil spray for air frying

Wash and pat the zucchini dry with a paper/ kitchen towel.

Chop the zucchini into thin roundels (1cm thickness).

Place the roundels in a broad vessel.

Add 1.5t garlic powder, 1.5t dried italian seasoning, 1/3t salt, 3/4t red chilli flakes, a pinch freshly ground pepper powder, 1t rice flour on to the zucchini.

Mix everything together and make sure all the zucchini roundels are coated with the seasoning.

Place the zucchini on the airfrying tray (place it one next to the other and not on top of each other).

Spray the zucchini roundels with cooking oil spray.

Airfry in a preheated airfryer of 200c for 25 mins flipping them once in between.

Keep an eye last few minutes to ensure nothing burns.

Once the zucchini is baked, take it out and dig in! So simple and so so yumm.
- Mental note is to cut the roundels a bit thicker for next time.
- I also want to try this by adding a brit of breadcrumbs as well.
- You can try the same recipe with big aubergine.
